Mace is the lacy outer covering (called an ‘aril’) of nutmeg. As such it carries a similar yet milder and somewhat more versatil flavour into both sweet and savoury recipes. Because it is not as punchy or sharp as ginger, mace blades are often used in Indian cooking and spicy cuisine. But they also make a delicious tea, and have many more applications.
